Soup season is here and as a personal favourite of the Hello Monday team, we’ve found the perfect tomato soup recipe to get rid of the winter cold! Paired with cheesy toasted bread, this is the ultimate winter meal.

- 25g butter
- 1 onion, roughly chopped
- 1 celery stick, roughly chopped
- 2 garlic cloves, roughly chopped
- 400g chopped tomatoes (tin)
- 1 tbsp tomato ketchup
- 750ml vegetable stock
- ground white pepper
- 100ml double cream
- 4 slices of sourdough (or your preferred bread)
- 100g cheese (sliced)
- Butter (to spread)
Melt butter in a pan and gently cook the onion and celery for 10 minutes or until softened. Add the garlic and cook for 2 minutes. Tip in the tomatoes, ketchup, stock, a pinch of salt and plenty of white pepper. Bring to a simmer and cook for 20 minutes.
While the soup cooks, make sandwiches with the cheese and sourdough. Butter the outsides of the sandwiches then fry in a large frying pan on both sides until golden. Cut into fingers.
Stir the cream into the soup, heat gently, then use a stick blender to blend until smooth. Pour into bowls and serve hot with the dippers.
